Chicken Caesar Salad

     This light, delicious dinner is perfect for a summer meal.  When the temperature skyrockets, and you are too tired to cook, this meal is on the menu.
 


     4 boneless, skinless chicken breasts
     a smidgen of barbecue sauce
     2 bags of Dole's Caesar Salad Kits

     Fire up the BBQ.  It's the only thing that gets hot with this meal.  Wash the chicken breasts and pat them dry.  Brush a light film of a mild barbecue sauce on the chicken.  The sauce is not meant to give a distinct flavor to the chicken but to keep it from sticking to the grill and to nicely brown all over. Grill the chicken 5-7 minutes on a side until the center is white.  When the chicken is done, cut it into cubes or strips (as you prefer).



     While the chicken is cooking, layer the lettuce, Parmesan Cheese packet, and croutons from each bag.  Save the two packets of dressing until the chicken is ready to be added.
     Once the chicken has been cooked and cut into pieces add it to the salad mix with the two packets of dressing.  Toss and serve with a crusty loaf of french bread, freshly baked at your local market.  Serves 4.
